Ratatouille

This is a long time recipe in my family. Wonderful by itself, hot, cold or with chicken. You can also use leftovers in an omelette.

Ingredients:

8-10 zucchini (slices)
2 eggplants (cubes)
2 green bell peppers (chopped)
2 onions (chopped)
2-3 tomatoes cans (diced or whole)
5-6 garlic gloves (finely diced)
olive oil
salt, pepper, thyme, persil, bay leaves to taste

Instructions:

1. Brown onions until golden
2. Add green bell peppers. Cook until soft.
3. Put onions and green bell peppers in a bowl.
4. Slightly brown zucchini and cook until soften.
5. Add onions and green bell peppers to zucchini.
6. Add eggplant, canned tomatoes (cut in small pieces if whole), garlic, salt, pepper and herbs.
7. Cook for at least 30 minutes to 1 hour.
